One of the most important things wrong with grains is that they contain antinutrients. Antinutrients are found in grains and will actually interfere with the absorption of vitamins and minerals. These substances are made by plants as a way to keep insects and animals from eating the grain seeds. Antinutrients bind with nutrients and prevent them from entering the body.
The fiber found in whole grains has been touted for years as a panacea for digestive and cardiac health. However, studies have shown that insoluble fiber actually causes damage to the intestinal linings as it bullies its way through your system.
The damage done to the lining of your stomach and intestines can contribute to the development of leaky gut syndrome. With the assistance of runaway yeast (also a component of most baked goods) the dings and bangs your gut receives will allow the contents of your gastrointestinal tract to seep into the rest of your body, ultimately entering your bloodstream.
A great deal of attention has been given to celiac disease, which is sensitivity to gluten commonly found in grains. Celiac disease can lead to malabsorption of nutrients as well as the development of liver problems and autoimmune diseases.
An unfortunate companion to gluten is lectin, which can also cause problems such as facilitating the binding of viruses to your cells – this has been linked directly to influenza as well as other viral infections. Lectins also have the ability to activate autoimmune diseases.
